Smoked Salmon Salad

Ingredients:

2 Tbs. white vinegar
2 Tbs. yellow mustard
2 Tbs. olive oil
1/2 cup plain yogurt
1 Tbs. prepared horseradish
1 pinch sugar
salt and pepper
1/2 head red leaf lettuce torn into large pieces
1 head butter leaf lettuce leaves torn into large pieces
8 tomato wedges
1/2 cucumber, peeled and thinly sliced
12-oz. smoked salmon fillet, torn into flakes

Preparation:

In a bowl, whisk together vinegar, mustard, olive oil, yogurt, horseradish and sugar. Season with salt and pepper.

In a large bowl, toss dressing with remaining ingredients.

Yield: 6 servings
