TIPical Mary Ellen host Mary Ellen Pinkham shares some of her favorite taco recipes.

Greek Taco

Ingredients:

1/2 cup plain yogurt
pinch of dill
1/4 tsp. oregano
1 lb. diced chicken
1 cup crumbled feta cheese
8 soft flour tortillas
1/2 cup tomatoes
1/2 cup sweet peppers
1/2 cup cucumbers

Preparation:

Mix yogurt, dill and oregano in a small bowl and set aside. Place diced chicken and crumbled feta on a soft flour tortilla. Top with tomatoes, sweet peppers, cucumbers and yogurt mixture.

Italian Taco

Ingredients:

1 lb. hot Italian sausage
1-1/2 cup marinara sauce
8 flour tortillas
1/2 diced tomatoes
1 cup freshly grated Parmesan cheese

Preparation:

For a unique mix of cultures, make an Italian-style taco. Instead of ground beef, use Italian sausage mixed with marinara. Fill flour tortillas (or hard-shell, if you prefer) with the mixture, then top with diced tomatoes and freshly grated Parmesan.

Asian Taco

Ingredients:

1 lb. ground beef or diced pork
1/2 cup chopped red pepper
3 Tbs. hoisin sauce
1 tsp. minced garlic
1/2 cup scallions
8 soft corn tortillas
1 cup shredded cabbage
sweet chili sauce

Preparation:

Sauté beef or pork, then add chopped red pepper. Mix in the hoisin sauce, garlic, and scallions, then place in soft corn tortillas. Top with shredded purple or green cabbage. Drizzle with sweet chili sauce.

American Taco

Ingredients:

1 pound cooked hamburger
1 cup barbecue sauce
8 flour tortillas
1 cup grated cheddar cheese
1 cup lettuce
1/4 cup toasted pecans

Preparation:

Mix hamburger meat with barbecue sauce. Place in flour tortillas and top with lettuce, grated cheddar cheese and pecans.

Tips


  • Use a bamboo steamer to steam soft-shelled tortillas.
