Enhance bottled barbecue sauce by adding brown sugar. This will add a sweet touch to your chicken. Serve with sautéed vegetables for quick to round out the meal.
Culinary expert Shirley Allen shows how to make two Southern favorites--barbecue chicken and banana pudding--in less than an hour. The secret to making these dishes in less time is to do some of the prep work ahead of time.

Quick Barbecue Chicken

Ingredients:

1 lemon, quartered, with rind
1 cup brown sugar
26 oz. bottled barbecue sauce
1/2 cup bell peppers
1/2 cup onion
1/2 cup celery
8 pieces baked chicken (done ahead or purchased)

Preparation:

Add cut up lemon and brown sugar to bottled barbecue sauce and mix well. Sauté peppers, onion and celery in a little oil until soft and add to sauce. Spread baked chicken out in a shallow pan and spoon on the entire amount of sauce. Cover and bake in a 350-degree oven for 15 minutes until ingredients are warmed through.

Banana pudding is a classic favorite with young and old alike.
Easy Banana Pudding

Ingredients:

14 oz. can sweetened condensed milk
14 oz. water
three 5-oz. boxes vanilla instant pudding
12 oz. of nondairy whipped topping
12 oz. box vanilla wafer cookies
3 to 4 bananas, sliced

Preparation:

Mix condensed milk and water together until completely blended. Add pudding and mix well. Chill for about five minutes, then add whipped topping. Layer bananas and vanilla wafers in the bottom of a large casserole dish (see photo at right). Cover with pudding mix. Repeat layers until pan is full. Top with crumbled wafers if desired.
