Rice and chorizo, a type of Cuban sausage, is a popular Spanish dish that is easy to make at home.
Food expert Mayi Brady shows how to spice up your diet with Spanish dishes.

  • Chorizo is a sausage that is widely available at chain groceries and comes in mild or spicy versions. Some are hard, for slicing, and others are soft, for crumbling.

  • Yucca is a root vegetable, similar to a potato, that has more fiber and vitamin C. It is available fresh at Latino markets or frozen in most grocery stores.

Chorizo and Rice

Ingredients:

2 Tbs. olive oil
1 onion, chopped
4 garlic cloves, minced
1 tomato, chopped
1 green bell pepper, chopped
1 red bell pepper, chopped
1 tsp. cumin
1 cup white rice
2 cups chicken stock
3/4 pounds Spanish chorizo

Preparation:

Saute onion and garlic in olive oil over medium heat until fragrant. Add tomato and peppers. Cook until softened. The longer these veggies cook, the richer the flavors become. Add cumin and rice. Stir until rice is well-coated. Add stock and chorizo, cover and simmer for 15 minutes.

Yucca and Mojo de Ajo

Ingredients:

yucca
3 Tbs. olive oil
3 coves garlic, minced
3 Tbs. lemon juice

Preparation:

Boil frozen yucca until soft. Saute garlic in oil until fragrant. Add lemon juice and bring to a boil (this will happen quickly). Pour sauce over hot yucca. If there is any leftover boiled yucca, make French fries out of it.
