German Potato Salad
Culinary expert Colleen Miner offers tips for preparing German potato salad, schnitzel and red cabbage with apples.

German Potato Salad

Ingredients:

4 cups red potatoes, (sliced or cubed and cooked)
1/2 cup scallions
1 cup smoked sausage, cubed
1 cup rice vinegar
1/2 tsp. pepper
1/2 tsp. salt
2 Tbs. crumbled cooked bacon
1/4 cup sugar

Preparation:

Toss together potatoes, scallions and sausage in a large bowl. In a small saucepan, simmer remaining ingredients for about 10 minutes or until sugar has dissolved. Pour over the potatoes and mix well.

Quick Kraut Fact

Germans started making sauerkraut as a way to preserve the cabbage harvest. In Germany it is not eaten straight from the brine, but rather first rinsed with cold water.

Red Cabbage and Apples

Ingredients:

1 head red cabbage
2 apples (peeled, cored and sliced thin)
1 cup diced onion
2 Tbs. red-wine vinegar
1/4 cup sugar

Preparation:

Combine all ingredients in a large saucepan and cook uncovered over medium heat for about 30 minutes or until it cooks down.

What's a schnitzel?

Schnitzel is a German term for a method of preparing a cutlet of meat by dipping it in egg and breading then frying. Wiener schnitzel refers to veal cutlets prepared in this manner.

Pork Chop Schnitzel

Ingredients:

4 boneless pork chops
1 cup flour
1 tsp. pepper
1 tsp. salt
dash paprika
1 cup milk
1 egg
3 Tbs. olive oil
1 Tbs. butter
1 cup breadcrumbs

Preparation:

Trim fat from pork chops (figure A), then place between two sheets of plastic wrap and pound with the flat side of a meat tenderizer until the cutlets are about 3/8-inch thick (figure B).

Combine flour, pepper, salt and paprika in a large bowl and mix well. In a separate bowl, combine milk and eggs.

Heat olive oil and butter in a large skillet.

Dip cutlets in flour mixture, then in the egg wash and finally in the breadcrumbs. Cook in butter and oil until golden brown on both side.

Hint

For a slightly healthier schnitzel, replace the pork chops with turkey cutlets.
