This yummy caesar salad was made with nouvelle mayonnaise (recipe below) that eliminates all the fat and none of the flavor.
Chef Cary Neff shares a recipe for a homemade, fat-free mayonnaise that will add flavor but not calories to any dish. This has 15 calories per tablespoon, compared with 229 calories for traditional mayonnaise.

Mayonnaise Nouvelle

Ingredients:

2 cups plain fat-free yogurt, drained
2 cups soft tofu
1 Tbs. roasted garlic
2 Tbs. rice-wine vinegar
1 tsp. Worcestershire sauce
1 tsp. red pepper sauce
1 Tbs. sea salt
1/2 tsp. white pepper

Preparation:

Drain the yogurt by placing it in a strainer lined with cheesecloth. Let the liquid drain through, leaving it thick and creamy.

Add remaining ingredients to the bowl of a food processor and whip for two to three minutes until smooth and blended.

To make Parmesan crisps, bake thin slices of Parmesan cheese onto parchment paper until it turns golden.
Caesar Dressing

Dressing Ingredients:

2 cups mayonnaise nouvelle
1 Tbs. roasted garlic
1-1/2 tsp. minced garlic
1 Tbs. anchovy paste (optional)
1 Tbs. Dijon mustard
1 Tbs. extra-virgin olive oil
1/2 tsp. white miso paste
1/8 tsp. sea salt
1 tsp. minced parsley

Salad Ingredients:

romaine lettuce
bagel chips
Parmesan crisps

Preparation:

Combine all ingredients for the dressing in a large bowl and blend well.

Pour dressing over romaine in a salad bowl and toss with bagel chips. Finish with pieces of a Parmesan crisp.

To make the crisp, lay long, thinly shaved strips of Parmesan cheese on parchment paper (figure A) and toast in the oven until it turns lightly brown. Remove and break over the salad.

Chicken salad gets a healthy twist when made with fresh herbs, grapes and nouvelle mayonnaise.
Nouvelle Chicken Salad

Ingredients:

2 cups cooked chicken breast, shredded
1/2 cup celery, chopped
1/4 cup grapes, halved
2 Tbs. pistachios, chopped
2 tsp. sea salt
2 tsp. black pepper
2 Tbs. fresh tarragon
2 Tbs. Dijon mustard
1 cup mayonnaise nouvelle

Preparation:

Combine all ingredients in a large bowl and blend well.
