Anybody can go out and buy a jar of tapenade, but Mary Ellen explains how to make your own.
TIPical Mary Ellen host Mary Ellen Pinkham provides recipes and tips for making and serving tapenades (an olive spread that can be used as a dip, filling, sauce or spread).

Tapenade

Ingredients:

1 clove of chopped garlic
2 cups whole, pitted kalamata olives
one 2-oz. can anchovy fillets, rinsed
2 Tbs. capers
1 tsp. chopped fresh thyme
1 tsp. chopped fresh rosemary
3 Tbs. lemon juice
4 Tbs. olive oil

Preparation:

Place all of the ingredients, except for the olive oil, in a blender or food processor. Slowly add the olive oil as you blend into a paste.

Serving Ideas


  • Serve tapenade with pita bread or on a hamburger.

  • For a delicious appetizer, fill cherry tomatoes with tapenade (figure A). Use a melon baller to hollow out the tomato.

  • Tapenades can also be warmed slightly and added to pasta (figure B). Add more olive oil or a little water if necessary, and add some fresh tomatoes.

  • Look for other varieties of tapenade to serve in your grocer's deli.
