TIPical Mary Ellen host Mary Ellen Pinkham offers tips for effectively using butter in the kitchen.
  • Butter can be stored either in the refrigerator or on the counter in a covered butter dish. Most people think that butter goes bad, but it doesn't. It may become a darker color, but it is still OK to eat.

  • If you are not going to use the butter you purchased right away, store it in the freezer. It will keep for six months.

  • To melt butter quickly, cut the butter into small pieces so that it all melts uniformly. Do not let butter boil because it will caramelize and change the flavor.

  • Save the wax paper in which sticks of butter and margarine are wrapped. Fold them up and place them in the butter compartment of your refrigerator to use for greasing pans when baking.

  • For a heart-healthy butter spread, mix equal parts butter and olive oil. This will yield half the saturated fat, yet retain the buttery taste.
