A fondue pot is inexpensive and serves as a gathering point for the family to enjoy a meal.
Norbert Wabnig, a cheese expert, shows how to make a family meal fun with fondue. It's a great way to get everyone involved and to use leftover cheese, bread, veggies, fruits and even cake.

Cheese Fondue

Ingredients:

1 garlic clove
non-alcoholic white wine
8 oz. cheese, shredded or cubed (per person)
white flour or starch (no more than 1 Tbs. per person)

Preparation:

Squeeze the garlic clove and wipe around the interior of the fondue pot. Chop and leave garlic in the pot, according to taste. Preheat the fondue pot and, as it warms, add the wine. The amount will vary, according to how many people are eating and desired consistency.

Add the cheese as the wine warms. Swiss cheese is the traditional cheese to use, but cheddar and most other firm cheeses will do. Stir frequently. Add flour to help keep the mixture from breaking up. Once the cheese is smooth and hot, you are ready to dip.

Most fondue sets come with skewers. Use these to dip baby vegetables (figure A) such as squash and carrots, or fruits--chunks of apple are delicious. Day-old crusty bread (figure B) and traditional meats (figure C) complete the meal. There are no hard and fast rules on these foods, so don't be afraid to try your favorites.

Dip the food into the cheese until covered, then remove and spin several times to prevent dripping. Enjoy.

* Note: A wonderful characteristic of fondue is that it is very forgiving. If the mixture is too thin, add some cheese. If it is too thick, add some wine.

Chocolate Fondue

Simply melt chocolate chips in a fondue pot or double boiler. Strawberries, banana slices and marshmallows are great for dipping, and melted chocolate, of course, makes a delightful dessert.
