Bob Blumer of the Food Network shows how to grill pizza. The trick is to pre-cook the toppings, except the cheese and sauce, which is optional.
Grilled Pizza
Ingredients for Eggplant Pizza:
eggplant
asparagus
sun-dried tomatoes
fontina cheese
frozen or store-bought dough
Ingredients for Tomato Pizza:
fresh tomatoes
whole onion
Stilton cheese*
frozen or store-bought dough
* Stilton--A rich, waxy cheese with a blue-green mold and a wrinkled rind.
Preparation:
Allow dough to rise to room temperature, then sprinkle with corn meal or dough (so that it isn't too sticky). Roll or stretch out the dough to the size you want.
Prepare all vegetables before grilling. Grill sliced eggplant for 10 minutes, asparagus for five minutes and caramelize onions in a skillet.
Brush dough with olive oil and drop on a preheated gas grill. Grill covered for two minutes. Flip the dough, then add the appropriate vegetables and toppings and grill, covered, for two more minutes. Remove and enjoy.
