Winter Hot Chocolate Soup

Ingredients:

2 cups whole milk
1/4 cup sugar
1/4 cup cocoa
1/2 tsp. cinnamon
1/2 tsp. vanilla
1 cup cream

Preparation:

Add 1-1/2 cups of whole milk to a saucepan and heat on low. In a small bowl, add the remaining 1/2 cup of milk, along with the sugar, cocoa, cinnamon and vanilla. Whisk together to make a paste. Add the paste, then the cream to the saucepan and stir together. Heat until hot but not boiling. Serve in a bowl with chopped chocolate, marshmallow or graham crackers.

Winter Scandinavian Fruit Soup

Ingredients:

6 cups apple juice
3 cups chopped dried fruit
1 cup pitted black cherries, canned or frozen
1/4 cup tapioca
1/2 cup sugar
2 cinnamon sticks
1 Tbs. orange zest

Preparation:

Combine ingredients in a microwave-safe bowl and then heat on high for 15 to 20 minutes until boiling and thickened. Serve in a bowl with a drizzle of cream.

Summer Chocolate Soup
Summer Chocolate Soup

Ingredients:

6 oz. chopped chocolate
1 cup cream

Preparation:

Microwave the chocolate just until melted. Stir together with the cream and let cool to room temperature. Serve in a bowl with fruit or a pastry spoon. Make a pastry spoon by cutting prepared piecrust dough into the shape of a spoon. Sprinkle with cinnamon and sugar and bake until browned.

Summer Tropical Gazpacho

Ingredients:

1-1/2 cups strawberries, fresh or frozen
1-1/2 cups sparkling water
1/4 cup sugar
1 tsp. lemon juice
1 mango, chopped
1 passion fruit, chopped
1 papaya, chopped
1 kiwi, chopped

Preparation:

Add strawberries, water, sugar and lemon juice to blender. Blend until uniform. (This part can be done a day ahead if preferred). Add the chopped fruit and stir. Serve chilled in a martini glass with a kiwi garnish.
