Rich Chocolate Fondue
Ingredients:
1-1/2 cups light silken tofu
1 cup soymilk
1/2 cup cocoa powder
1/3 cup brown rice syrup
1/2 cup evaporated cane juice
1 Tbs. vanilla
Preparation:
Put tofu in the bowl of a food processor and blend until thick and smooth. Add the soymilk and blend.
Heat the brown rice syrup, then add the cocoa powder, blending until it makes a very thick mixture. Add this mixture to the processor bowl, along with the cane juice and vanilla. Blend until smooth.
Warm the mixture in the microwave and transfer to a fondue pot. Serve with fruits and cake.
Rice Pudding
Ingredients:
3 cups white rice
3 cups soy milk
1 pkg. silken tofu
2 Tbs. cornstarch
2 cups evaporated cane juice
1 Tbs. vanilla
Preparation:
Cook rice according to package directions. Add soymilk to the rice and heat through--about 20 minutes.
In the bowl of a food processor, combine the tofu, cornstarch, juice and vanilla. Blend until smooth. Combine the tofu mixture with the rice mixture and turn into a large baking dish. Bake 25 minutes at 350 degrees.
