Entertaining expert Patty Maynard shares simple fudge recipes that can be made in the microwave.

Basic Fudge

Ingredients:

3 cups sugar
1/2 cup butter
1 cup milk
4 oz. chocolate (milk, dark, white, semisweet)

Preparation:

Bring sugar, butter and milk to a boil over medium heat, stirring constantly. When the entire surface is covered with bubbles (figure A), remove from heat and add chocolate.

Stir constantly until chocolate is melted and well blended. Pour into a pan that has been oiled first (or sprayed with cooking spray) and lined with parchment paper (figure B). Chill for an hour.

Variations

Mint

Add one tablespoon peppermint extract after the chocolate has melted in the pot. Garnish with chopped red-and-white peppermint candies.

Crispies

Add crisped rice cereal after the chocolate has melted to desired consistency.

Worms

Crush chocolate-wafer cookies into fine crumbs and sprinkle over the top of the fudge. Arrange gummy worms in the "dirt" (figure C).

Layered

Melt a 12-ounce bag of white chocolate in the microwave, heating in short amounts of time and stirring frequently. Add one can of white icing and spread this bottom layer in the pan. Mix food coloring with remaining mixture and layer. For a darker color, melt a 2-ounce bag of butterscotch chips and add icing. Add food coloring and spread over other layers.
