Preparation: Bring sugar, butter and milk to a boil over medium heat, stirring constantly. When the entire surface is covered with bubbles (figure A), remove from heat and add chocolate.
Stir constantly until chocolate is melted and well blended. Pour into a pan that has been oiled first (or sprayed with cooking spray) and lined with parchment paper (figure B). Chill for an hour.
Variations
Mint
Add one tablespoon peppermint extract after the chocolate has melted in the pot. Garnish with chopped red-and-white peppermint candies.
Crispies
Add crisped rice cereal after the chocolate has melted to desired consistency.
