Peanut Butter Rolls

My mother-in-law makes these super-sweet treats every year--who would have thought a potato could taste so good?

Ingredients:

1 medium potato
1 box powdered sugar
peanut butter

Preparation:

Boil potato in skin until soft. Peel potato, then mash. Stir in sugar until mixture reaches a dough-like consistency. Sprinkle powdered sugar onto wax paper and spread out mixture with your hands until it's about 1/3-inch thick. Spread peanut butter over the mixture. Carefully roll up, using powdered sugar as needed to prevent sticking. Wrap in wax paper and refrigerate until cool. Cut into slices and serve.
