Cottage-Cheese Pancakes

Ingredients:

6 eggs
1 cup small-curd cottage cheese
4 Tbs. vegetable oil
1/2 cup flour
1 tsp. salt
1/2 tsp. baking powder

Preparation:

Blend all ingredients until smooth. Measure out the mixture and fry just like ordinary pancakes.

Cottage-Cheese Salad Dressing

Ingredients:

1 cup cottage cheese (cream style)
2 Tbs. sugar (or sugar substitute)
4 Tbs. lemon juice
fresh herbs (optional)

Preparation:

Add all ingredients to the blender and mix until creamy. Add a few tablespoons of milk if necessary to reach the desired consistency. Add fresh herbs if desired.

Cottage-Cheese Custard

Ingredients:

3 eggs
3/4 cup heavy cream
3/4 cup water
1 cup cottage cheese
1/2 cup sugar
1 tsp. vanilla
cinnamon

Preparation:

Blend all ingredients well. Pour into six, 6-ounce custard cups. Dust tops with cinnamon and bake at 350 degrees for 30 to 35 minutes.
