  • Spread peanut butter on two graham cracker squares. Scoop ice cream onto one square and top with the other. Wrap with plastic wrap and freeze (figure A).

  • Spread cream-cheese frosting between two chocolate cookies, or raspberry jam between two shortbread cookies (figure B).

  • Spread lemon curd between two ginger snap cookies.

  • Another tasty idea is with peanut butter and oatmeal raisin cookies (figure C).

  • How about caramel and chocolate-chip cookies?

  • Dress up a cookie sandwich with a little food coloring. Just beat together one tub of vanilla frosting, one teaspoon lemon or lime juice, and a few drops of green food coloring. Spread between two sugar cookies (figure D), and that's it.

  • Mix 1/4 cup creamy peanut butter, a cup of confectioners' sugar, 1/4 tsp. vanilla and 1/4 cup milk until smooth. Spread between two peanut butter cookies.
