Creme Anglais
Ingredients:
6 egg yolks
1/2 cup sugar
2 cups milk
1 Tbs. real vanilla
Preparation:
Whisk together egg yolks. Save the whites in a jar and store them in the freezer for future recipes. Whisk in sugar. Heat milk on the stove. Slowly add the milk to the yolk mixture, whisking the entire time. Place this back in the pan and place over a low flame. Whisk continuously.
Flavor the custard with real vanilla. Scrape the bean pod and add this directly to the custard. Save the bean pod by in a small container of sugar to make vanilla-flavored sugar.
Chocolate Custard
Ingredients:
1/2 cup sugar
6 egg yolks
1/4 cup cocoa
2 oz. semisweet chocolate
Preparation:
Whisk 1/2 cup sugar with egg yolks. Add cocoa. Heat milk and chocolate on the stove. Pour this slowly into the yolk mixture, whisking the whole time. Pour mixture into custard cups and place in a baking pan with a water bath. Bake for 350 degrees for 30 to 45 minutes.
Tips
- Melt high-quality vanilla ice cream to make a quick-and-easy creme anglais. Pour this over fresh fruit for a tasty treat.
- Both of the above custards can be poured into a unbaked pie crust and baked for custard pie.
- Pour creme anglais through a sieve to remove any particles present. Freeze creme anglais to make ice cream or save in the refrigerator for up to one week.
