Moo's Peanut Butter Cookies

My mother-in-law (we call her "Moo") used to make these for her kids all the time. They're easy to make, so they're great for parties.

Ingredients:

1 cup shortening (or 2 sticks butter)
1 cup sugar
1 cup brown sugar
1 tsp. vanilla
2 beaten eggs
3 cups sifted all-purpose flour
2 tsp. baking soda
dash of salt
1 cup crunchy peanut butter

Preparation:

Combine shortening and sugars in food processor. Add vanilla and eggs, and mix well. Mix flour, baking soda, and salt, adding gradually to the mixture and mixing well. Blend in the peanut butter. When mixture is blended well, roll into small balls and flatten onto baking sheet. Bake at 375 degrees for 10 minutes.
