Cheesy Grits Casserole

Ingredients:

2 cups whole milk
1/2 cup quick-cooking grits
1 cup grated Swiss cheese
1/2 cup grated Parmesan cheese
salt and pepper to taste

Preparation:

Bring milk to a boil in a large saucepan and stir in grits. Remove from heat and stir in cheeses. Add salt and pepper to taste. Pour mixture into a casserole pan and bake in a 350-degree oven for about 30 minutes.

Serve Fried Green Tomatoes as a side dish for Country Ham.
Fried Green Tomatoes

Ingredients:

sliced green tomatoes
flour
eggwash
cornmeal
olive oil

Preparation:

Dip tomato slices into flour, then eggwash, then cornmeal. Preheat a skillet and add oil. Fry tomatoes until golden brown on each side.

Ingredients:

4 cups self-rising flour*
2/3 cup vegetable shortening
1-2/3 cups buttermilk

Preparation:

Preheat oven to 475 degrees.

Combine all ingredients and roll out the dough until about 1/2-inch thick. Do not overwork the dough or the biscuits will be tough.

Cut out biscuits with a biscuit cutter. Place on a baking sheet and bake for about 15 minutes or until golden brown and delicious.

* Note: If you can't find self-rising flour, just mix 1-1/2 teaspoons baking soda and a half teaspoon of salt into each cup of all-purpose flour.

Red-Eye Gravy

Ingredients:

pan drippings from ham
1/2 cup strong black coffee
2 Tbs. thin flour-and-water mixture

Preparation:

After browning ham, pour coffee into the skillet. Bring mixture to a boil, then stir in the water-and-flour mixture. Stir well, making sure to scrape any bits of ham off the bottom of the skillet to add extra flavor. Continue cooking until gravy thickens. Serve over fresh hot biscuits.
