Turkey-Bacon Quiche

Ingredients for the Crust:

1-1/3 cups all-purpose flour
1/4 tsp. salt
1/2 cup chilled butter
3 Tbs. cold water

Preparation:

Mix together flour and salt. Cut chilled butter with a pastry cutter or two table knives until coarse crumbs are formed. Add water, a little at a time, and blend with a fork until dough is formed. Roll into a ball, cover with plastic wrap and chill in a refrigerator for 30 minutes.

After chilling, roll the dough into an 11-inch circle on a lightly floured surface. Press gently into a 9-inch pie pan, crimping the edges with your fingers. Prick dough several times with a fork and bake in a preheated 375-degree oven for ten minutes or until lightly browned. Allow to cool before filling.

Ingredients for the Filling:

4 large eggs
1/2 cup 2% milk
3/4 cup whipping cream
pinch of cream of tartar
10 strips turkey bacon, cooked, drained and crumbled
1/2 cup Swiss cheese, grated
1/2 cup white cheddar cheese, grated
1/4 cup fresh basil leaves, chopped
1/3 cup tomatoes, peeled, seeded and diced
salt and pepper to taste

Preparation:

Whisk together first four ingredients in a large bowl. Stir in remaining ingredients, reserving half of both types of cheese. Season with salt and pepper. Pour filling into the cooled crust. Sprinkle the reserved cheese over the filling. Bake in a preheated 375-degree oven for 30 minutes.
