Homemade Cinnamon Rolls

Try this blue-ribbon recipe for cinnamon rolls.

Dough Ingredients:

1 cup water at 105 to 115 degrees
2 pkgs. active dry yeast plus, 1 tsp. sugar
1/3 cup dry milk
1/2 cup butter, softened
1/4 cup honey
1/4 cup sugar
1 tsp. salt
3 eggs
4 to 4-1/2 cups all-purpose flour

Preparation:

Put water in a large mixing bowl. Add yeast to dissolve. Add one teaspoon of sugar to the water and let stand for five minutes. Add dry milk, butter, honey, sugar, salt and eggs, plus two cups of the flour. Blend together on low speed, then beat at medium speed for three minutes.

Add the rest of the flour to make a soft dough and knead until smooth by hand--about five to 10 minutes. Place in a greased bowl, cover, and let rise in a warm place until double in bulk. Punch down (figure A). Take half of the dough and roll into a 9 by 12-inch rectangle about 1/4 inch thick.

Roll the dough out on a pastry cloth (figure B) for best results because the dough will not stick to this.

Ingredients for the filling:

1/4 cup butter, softened
1/2 cup sugar
2 tsp. ground cinnamon

Preparation:

Spread with half of the butter. Combine the sugar and cinnamon and sprinkle half of it over the dough. Roll up like a jelly roll, starting with the 12-inch side.

Cut into one-inch slices and place on greased cookie sheets. You can use dental floss or thread to slice the rolls (figure C). Cover with a towel. Repeat the process with the other half of the dough. Let the rolls rise in a warm place until it doubles in bulk. Bake at 350 degrees for 12 to 15 minutes or until golden brown. Remove from the baking sheets to cooling racks.

Ingredients for the glaze:

1 Tbs. butter
1 Tbs. milk
1 cup powdered sugar
1/2 tsp. vanilla extract

Heat the butter and milk together, and then add the powdered sugar and vanilla. Drizzle over the tops of the warm rolls (figure D).

Makes 24 rolls.
