Bread Pudding

Host Mary Ellen Pinkham shares one of her favorite recipes.

Ingredients:

6 cups bread cubes (white bread with soft crusts)
4 whole eggs
1 egg yolk
3/4 cup sugar
1 tsp. nutmeg
1 tsp. vanilla extract
1/4 tsp. salt
4 Tbs. light rum
2-1/2 cups whole milk
2-1/2 cups cream
melted butter
cinnamon and sugar

Preparation:

Place four cups of the bread cubes in a baking dish. Whisk together the eggs and extra yolk. The extra yolk will make the mixture richer. Mix in the sugar to form a custard. Add nutmeg, vanilla, salt, and rum and mix. Then add the milk and cream and whisk together.

Preheat the oven to 325 degrees. Pour the mixture over the cubes in the baking dish (figure A), let it soak for about 10 minutes then add the remaining bread cubes on top.

Brush the top bread cubes with a little melted butter to form a crust, then sprinkle with cinnamon and sugar (figure B). Bake for about 45 minutes. Allow it to cool, then cut into squares and serve.
