Chef Claudia McQuillan demonstrates how to make this tasty bread salad.

Ingredients:

1 loaf white bread or foccacia
8 oz. fresh mozzarella
4 cups tomatoes, sliced
1 cup basil
1 cup olive oil
1/3 cup red-wine vinegar
1/4 cup balsamic vinegar
sea salt and black pepper to taste

Preparation:

Cut a bread loaf into cubes and place in a large mixing bowl. Add mozzarella, tomatoes and basil to bread cubes.

In a separate bowl, combine olive oil, red-wine vinegar, balsamic vinegar, sea salt and pepper and whisk. Pour the dressing over the bread mixture and toss together. Allow to set 30 minutes before serving.
