Culinary expert Jet Tila tells how to prepare three unusual drinks that use tea as a base.

Chai Tea

Ingredients:

spice mix
1 Tbs. fennel
6 green cardamom pods
12 cloves
1 stick cinnamon
1/4 tsp. black peppercorns
2 bay leaves
1/4 cup ground gingerroot
6 Tbs. sugar
2 Tbs. Darjeeling tea
3 cups water
1 cup milk

Preparation:

Mix spices in a bowl (figure A) before adding to the pot. This can be prepared in large quantities and stored in an airtight container in a cool, dry place. Add mix to boiling water and boil for five to 10 minutes (figure B), then steep for the same amount of time. Add milk. Serve warm.

Chai Latte

Start with chai tea and add two ounces of espresso or strong coffee. Top with steamed milk.

Mint Infused Green Tea

Ingredients:

4 cups water
6 to 8 green-tea bags
1 cup mint
1/2 cup sugar or honey

Preparation:

Add tea bags to boiling water and boil for five to 10 minutes. Add mint and steep for same amount of time. Add sugar or honey. Strain and serve warm or cold.

Yield: 3 servings
