Are You Up on Your Coffee Terms? Caffeine-A bitter crystalline alkaloid present in coffee, it prolongs the stimulating effects of cyclic AMP (nucleotide present in and vital to the energy processes of all living cells) on the heart and nervous system.
Espresso--This type of coffee is prepared in a special machine from finely ground coffee beans, through which steam under high pressure is forced. It is best with arabica beans that have been roasted dark.
Cappuccino--It's espresso coffee mixed with steamed, frothed milk and often garnished with cinnamon or powdered chocolate.
Latte--a "strong" espresso coffee mixed with warmed, but not steaming, milk
Ristretto--It's espresso made one ounce at a time, which keeps it flavorful and avoids dilution.
Mocha--It's cappuccino mixed with chocolate syrup or powder. It can be frothed with chocolate milk.
Frappe--It's made with cold espresso, sugar, water and ice cubes and served in a tall glass with ice and a straw with a thick froth on top.

- Make coffee with the best water available because 90 percent of coffee is water. Keep the water cold before bringing to a boil.
