Cuban Cocktails

Daiquiri

Ingredients:

2 cups crushed ice
juice of 1/2 lime
1 Tbs. sugar
1-1/2 to 2 oz. white rum

Preparation:

Place crushed ice in a blender and blend until you have a smooth consistency. Add the lime juice, sugar and rum, then blend for 10 seconds.

* Chef's Note: The daiquiri was invented in Cuba by an American who was living there at the time.

Mojito

Ingredients:

2 large mint leaves
1 Tbs. sugar
juice of 1/2 a lime
1-1/2 to 2 cups soda water
1/2 cup ice
1-1/2 to 2 oz. white rum

Preparation:

Place mint leaves, sugar and lime juice in a glass. Crush them together with a spoon, making sure they mix together well. Add soda water, ice and rum, then stir all the ingredients together. Garnish with mint and a slice of lime.

* Chef's Note: The mojito was said to have been one of author Ernest Hemingway's favorite drinks.
