

A hole in the middle of a hamburger patty (like a doughnut) helps the meat to cook in half the time. The patty will cook evenly and won't puff up as it cooks.


A marinade (which also can just be brushed on) protects meat from drying out and forming unhealthy chemical compounds. Dry rub will do the same.


Cut meat perpendicular to the longest grain to avoid shrinkage.
