Boz's Meatloaf
Ingredients:
3 Tbs. butter
3/4 cup onions, diced
1/2 cup carrots, diced
2 tsp. garlic, minced
1/2 cup green and yellow bell pepper, diced
4 green onions, chopped
1 celery stalk, chopped
3 eggs
1-1/2 tsp. ground cumin
1/2 tsp. grated nutmeg
dash cayenne pepper
1/2 cup ketchup
1/2 cup heavy cream
salt and pepper to taste
2 lbs. ground chuck
6 oz. ground veal 6 oz. Jimmy Dean. regular sausage
3/4 cup ground breadcrumbs
1 small pitcher of boiling water
Preparation:
Preheat oven to 375 degrees. Melt butter in skillet, add onions and carrots. SautX. Add garlic, green onions, celery and peppers. SautX for approximately 10 to 12 minutes until liquid evaporates, set aside, cool and refrigerate for about an hour.
In a bowl, combine eggs, cumin, nutmeg, cayenne pepper and salt and pepper to taste. Mix. Add ketchup and heavy cream. Mix well, then add ground chuck, ground veal, sausage, bread crumbs and chilled vegetables. Knead mixture for three to five minutes. Form into loaf; place in baking dish and place baking dish in larger pan. Pour boiling water about halfway up the side of the smaller baking pan. Bake for 45 minutes. After baking, let meatloaf cool 15 to 20 minutes before slicing.
