Stuffed Mushroom Caps

Mushrooms stuffed with blue cheese and garlic are a very flavorful treat for any occasion.
Here's an appetizer that's very good, very easy and very fast; it's great for an appetizer emergency.

Ingredients

1 small container of button mushrooms
crumbled blue cheese
1 clove smashed garlic
Italian bread crumbs
a little olive oil

Wash the mushrooms, remove the stems, and with a paring knife, hollow out the center of each mushroom. Next, combine the blue cheese, garlic and a few tablespoons of olive oil until you have a loose paste, with the consistency of cottage cheese. With a small spoon, stuff each mushroom with the mixture and set on a baking sheet lined with parchment paper. Sprinkle dry Italian bread crumbs over the top of your mushrooms.

Bake at 400 degrees for about 10 minutes. Garnish with fresh herbs of your choice and a little more Italian bread crumbs.
