Ingredients for the dressing:

2 Tbs. chopped garlic
1 bunch finely chopped cilantro
2 finely chopped jalapeno peppers
1/2 cup olive oil
1/3 cup fresh-squeezed lime juice (approximately two good-size limes)*
salt and pepper to taste

* Note: If the lime juice is difficult to extract, use a spoon to force it out of the pulp.

Preparation:

Stir ingredients together in a small mixing bowl and set aside.

Ingredients for the remainder of the recipe:

1 red bell pepper
1 green bell pepper
1 bunch finely chopped green onions
14-1/2 oz. can drained black-eyed peas
14-1/2 oz. can drained hominy
14-1/2 oz. can drained black beans
1 diced tomato
salt and pepper to taste

Preparation:

Add dressing to remaining ingredients and lightly toss together. Avoid crushing the ingredients while mixing.

Yield: 4 to 6 servings
