  • An unopened jar of olives can be stored in a cool, dark place for up to a year. After opening, store them in the refrigerator for up to a month.

  • Never refrigerate canned olives in the can because the metal will tarnish the taste. Transfer them to an airtight glass jar instead.

  • Store bulk olives in an airtight jar covered with vegetable oil. Place in the refrigerator for up to two months.

  • Got pits? One way to quickly remove olive pits is by placing the olives between towels and rolling over them with a rolling pin.

  • For a unique appetizer, stuff large pitted olives with smoked almonds.

  • Add olives to sandwich fillings and spreads to give dull sandwiches a little flavor and variety.

  • Add nutrition and flavor to spaghetti sauce by stirring in chopped olives.
