Try a gourmet twist on the common pizza by adding low-fat, precooked rotisserie chicken. Cooking expert Carla F. Williams shares three recipes.Polynesian Chicken Pizza
Ingredients:
prebaked 11" pizza crust
2 cups rotisserie chicken
1 bunch green onions, chopped
1/2 cup sweet-and-sour sauce
1/2 cup Monterey Jack cheese
1/2 cup Canadian bacon
one 8-oz. can crushed pineapple in its own juice
Preparation:
Mix the chicken, onions and sweet-and-sour sauce together. Spread it on the pizza, stopping a half inch from the edge since the sauce will spread out more as it heats up.
Add the cheese, using the amount you wish. Sprinkle with Canadian bacon and drained pineapple.
Bake in a preheated 450-degree oven for 12 minutes. Place the crust directly on the oven rack, without a pan.
