Polynesian Pizza is made with rotisserie chicken and pineapple.
Try a gourmet twist on the common pizza by adding low-fat, precooked rotisserie chicken. Cooking expert Carla F. Williams shares three recipes.

Polynesian Chicken Pizza

Ingredients:

prebaked 11" pizza crust
2 cups rotisserie chicken
1 bunch green onions, chopped
1/2 cup sweet-and-sour sauce
1/2 cup Monterey Jack cheese
1/2 cup Canadian bacon
one 8-oz. can crushed pineapple in its own juice

Preparation:

Mix the chicken, onions and sweet-and-sour sauce together. Spread it on the pizza, stopping a half inch from the edge since the sauce will spread out more as it heats up.

Add the cheese, using the amount you wish. Sprinkle with Canadian bacon and drained pineapple.

Bake in a preheated 450-degree oven for 12 minutes. Place the crust directly on the oven rack, without a pan.

Fiesta pizzas are a quick and easy snack.
Fiesta Pizza

Ingredients:

one 8" flour tortillas
1/2 cup salsa
1/2 cup rotisserie chicken
1/2 to 1 cup Mexican-blend cheese
1 green onion, chopped
2 tsp. chilies

Preparation:

Spread each tortilla with salsa. Add cheese, then onions, chicken and chilies. Bake in a preheated 450-degree oven for six minutes.

Barbecue chicken pizza is a healthy alternative to fat-laded pepperoni pizza.
Barbecue Chicken Pizza

Ingredients:

prebaked 11" pizza crust
1/2 cup red onion, sliced
1-1/2 cup cooked chicken
1/2 cup barbecue sauce
1/2 to 1 cup Gouda cheese
1/2 to 1 cup mozzarella cheese
cilantro for garnish

Preparation:

Spread the onion sliced on the pizza crust. Combine chicken and barbecue sauce and spread on the pizza.

Combine the Gouda and mozzarella and sprinkle on the pizza. Bake in a preheated 450-degree oven for 12 minutes.
