Spicy Pork Tenderloin With Lime Mayonnaise

Spicy Pork Tenderloin with Lime Mayonnaise

Ingredients:

1/2 tsp. minced garlic
1 tsp. paprika
1/2 tsp. salt
1/2 tsp. oregano
1/2 tsp. cumin
1/4 tsp. each black and red pepper
3/4 pound pork tenderloin
lime wedges and fresh cilantro garnish
lime mayonnaise, recipe follows
1 French baguette, thinly sliced, optional

Preparation:

Combine garlic, paprika, salt, oregano, cumin and ground peppers in a small bowl. Trim tenderloin with a sharp knife. Rub the seasoning mixture over the pork. Wrap and refrigerate overnight. Remove the pork from the refrigerator 30 minutes before roasting.

Preheat oven to 425 degrees. Unwrap the pork, place it in a roasting pan and roast it for 20 to 25 minutes or until a thermometer reads 155 degrees in thickest part of tenderloin. The tenderloin will continue to cook until it reaches 160 degrees. Allow it to rest on the counter for 10 to 20 minutes.

Served as a main dish or thinly sliced and served on French bread with a dollop of lime mayonnaise (see photo at right). Garnish with lime wedges and cilantro.

Yield: approximately 40 appetizers or three to four entree servings.

Lime Mayonnaise

1/2 cup reduced-fat mayonnaise
1 Tbs. fresh lime juice
1/2 tsp. grated lime zest

Preparation:

Combine all the ingredients in a small bowl. Cover and refrigerate until ready to serve.
