No Meat or Soy, Now What?

Smart Solutions : Episode SSL-453 -- More Projects »
Majid Ali, an alternative health expert, helps solve a nutritional dilemma if one can't eat meat or its common alternative, soy. He offers legumes (beans), nuts and grains as sources of protein.

A bean-and-rice combination forms a complete protein, as they complement each other with particular amino acids that both foods can miss. This combination, in other words, provides the same benefits as eating a meat or fish product.

Did you know?

A peanut is a legume and not actually a nut.

Almond Milk

Ingredients:

1/2 cup almonds, peeled, raw and ground
2 cups water
1 Tbs. maple syrup

Preparation:

Soak almonds in water to soften. In a blender, combine almonds and one cup water. Blend. After getting the blend started, add the second cup of water and maple syrup, then continue blending thoroughly. Use cheesecloth to remove sediment by straining the liquid into a container. Use this product as you would normally use milk, such as in cereal or baking.

Rice Milk

Ingredients:

4 cups warm water
1 cup plain, cooked rice
1 tsp. vanilla
1 tsp. canola oil
2 tsp. black-strap molasses

Preparation:

Combine all ingredients in a blender and mix thoroughly. Strain the mixture through cheesecloth to remove sediment. The rice milk will keep in the refrigerator for around seven days.
