TIPical Mary Ellen host Mary Ellen Pinkham provides tips on storing and using various types of cheeses.
  • To keep cheese fresh longer and stave off mold, grate and freeze it in a plastic freezer bag.

  • Cheeses that can be frozen include processed, Swiss, Greek, cheddar and even cream-cheese dips. If the cream cheese appears grainy after defrosting, just rewhip it.

  • Spray a little oil on the grater before you start grating, to make the cheese wash off easily.

  • Use a potato peeler to cut cheese into strips for salads and other garnishing.

  • Use cottage cheese in place of sour-cream in dips. Just cream it in a blender to get the consistency of sour cream of your preference.

  • Use Brie on top of spaghetti, instead of Parmesan cheese.
