Steps:

1. Mix one teaspoon of water per cup of sugar and hand knead it to make sure the water is evenly distributed.

2. Pack the sugar and water mixture into half of an egg mold (figure B). Wipe away any mixture that extends beyond the mold.

3. Trace the shape of the egg mold onto a paper plate. Draw a line across the tip of the egg to indicate where the sugar egg will be cut (figure C).

4. Place the mold with the sugar mixture onto the traced shape of the egg mold. Lift the mold, leaving the molded sugar on the plate (figure D).

5. Cut the sugar egg at the drawn line.

6. Cut a piece of sponge, wet it and place it over the cut end of the sugar egg.

7. Let the outer part of the egg dry and harden. Drying time will depend upon the temperature and humidity of the room. When the outer part of the egg has dried 1/4 inch, use a spoon to scoop out the center wet sugar (figure E).

8. Mold another half of an egg. Let it dry 1/4 inch and scoop out the wet center.

9. Using a pastry bag, pipe light green Royal icing into one of the sugar egg halves, creating the look of grass (figure F).
