Professional caterer Denise Vivaldo shows how to save time and effort by making your next dinner party a buffet.
  • Select food that serves well at room temperature.

  • If serving messy foods, use a dark tablecloth to hide spills.

  • Serve salad in a clear bowl so that the greens become part of the color scheme. Have a second bowl of salad prepared and ready to go. Dress the salad before serving for proper seasoning.

  • Serve the entree in individual serving sizes. It should be easy to cut and boneless.

  • Use a Crock-Pot to keep dishes like fondue warm.

  • Put the plates at the beginning of the line and silverware at the end so your guests don't have to juggle it while getting their food (figure A). Wrap silverware in a napkin for an easy-to-grab package.

  • Set up dessert and coffee at a separate table from the main table, perhaps even in another room.

  • Create interest on the table, create tiers on which the food will be presented. You can use something as simple as coffee can (figure B) to achieve this effect. Just hide the item underneath a drape of fabric.

  • Drape fabric around the table for a professional look. Simply knot the ends of yardage and swag around the serving plates. You can even hide pedestals underneath to create several levels (figure C).
