TIPical Mary Ellen host Mary Ellen Pinkham provides her favorite recipe for making pannekoeken or Dutch-style pancakes.
Ingredients:
1/2 stick butter
6 eggs
1-1/2 cups flour
3/4 cup sugar
1/2 tsp. salt
1 tsp. vanilla
3 cups milk
Preparation:
Preheat oven to 425 degrees. Melt butter in cast-iron skillet. Beat the eggs in a large mixing bowl. Stir in flour, sugar, salt and vanilla and combine with a hand mixer. Gradually add milk while mixing.
Pour mixture into skillet and place in preheated oven. You can also make individual servings, which resemble small traditional pancakes.
Bake for 30 minutes at 425 degrees, then turn oven down to 375 and bake an additional 10 to 15 minutes or until the sides puff up. Do not open the oven door, or you risk botching your pannekoeken. The key to making really good pannekoeken is to not overbake them. Remove immediately once they are puffy and golden brown.
Remove from skillet and top with items of your choice. Toppings range from fresh fruit to traditional breakfast fare such as bacon and scrambled eggs.
Diced almonds or walnuts make great additions. Another option is to squeeze a bit of fresh lemon over a pannekoeken and sprinkle with powdered sugar.
Don't forget the syrup! Maple syrup makes a great topping, as well as your favorite jellies or jams. There are a number of different toppings and fillings that compliment pannekoekens. Try maple syrup, butter and brown sugar, whipped cream, strawberries, blueberries, bananas and walnuts.
