Chef Beth Ginsberg explains how to create a low-fat version of brownies.
Ingredients:
2-1/4 cups natural cane sugar
1-1/2 cups flour
1-1/2 cups low-fat cocoa powder
1-1/2 tsp. baking powder
1-1/2 tsp. baking soda
1 /8 tsp. salt
1-1/3 cups unsweetened applesauce
1 cup low-fat silken tofu
3 /4 cup cocoa soy milk
2 egg whites
2 tsp. vanilla extract
Preparation:
Sift sugar, flour, cocoa powder, baking powder, baking soda and salt in a large mixing bowl. Combine in a food processor applesauce, tofu, soy milk, egg whites and vanilla; process until smooth.
Stir tofu mixture into the dry ingredients until there are no lumps. Lightly spray a baking pan. Pour the mixture into the pan and bake at 350 degrees for 45 to 55 minutes.
Brownie Glaze
Ingredients:
1 cup low-fat cocoa powder
1-1/2 cups rice syrup or honey
2 tsp. vanilla extract
Preparation:
Place all ingredients in a food processor; blend well.
Tips to reduce fat in recipes
- Use cocoa powder in chocolate desserts rather than baking chocolate which adds fat.
- Use egg whites or an egg substitute, which keeps the fat content low.
- Unsweetened applesauce is a good replacement for oil or butter, which normally gives desserts body.
