Dublin White Cheddar Potatoes O'Brien Recipe

Ingredients
1 medium white onion, medium dice
1 green bell pepper, medium dice
5 bacon strips, cut into 1/2-inch pieces
2 tablespoons unsalted butter
4 Idaho potatoes, peeled and diced
1 cup Dublin white cheddar, shredded
1/4 cup fresh parsley
salt
freshly-ground pepper
Directions
1. In a large skillet over medium heat, cook bacon pieces until crispy. Remove bacon from pan with a slotted spoon and place on a paper towel to drain.
2. Add onion and green pepper to bacon fat over medium heat and cook until soft and slightly brown. Using a slotted spoon, remove vegetables to drain on a paper towel.
3. Over medium heat, add butter. Once butter has melted, add in potatoes and cook over low heat until soft. Stir in bacon and vegetables.
4. Season with kosher salt and freshly-cracked black pepper. Top with white cheddar and some chopped parsley.
