Taste of the Tropics Cocktail
This frozen Caribbean cocktail hails from sunny Anguilla and combines coconut, rum and pineapple juice for a tasty, fruity drink.

Serves one.
Ingredients:
2 oz. Bacardi light rum
2 oz. Coco Lopez
6 oz. pineapple juice
1 1/2 cups crushed strawberries or purée
1 whole strawberry
1 1/2 cups ice
Preparation:
Place half cup of crushed strawberries on the bottom of a chilled medium or large wineglass. Gently swirl around the sides of the glass several times. Combine rum, coconut milk, pineapple juice and the remaining cup of crushed strawberries in blender.
Add ice and blend until smooth. Pour into the wineglass and garnish with whole strawberry.
