Honey Dijon Chickpea and Olive Pizza

Ingredients

Yield: 4 pizza slices

Pizza Ingredients
1 8-inch gluten-free pizza crust
2 tablespoons goat cheese, crumbled
1/2 cup red seedless grapes, cut lengthwise
1/4 cup cooked chickpeas
1/4 cup black olives, pitted and chopped
1/4 cup crumbled feta cheese
1 tablespoon pine nuts
1 tablespoon minced green onions

Honey Mustard Dressing
2 tablespoons extra virgin olive oil
2 teaspoons Dijon mustard
1 teaspoon honey (vegan substitute: agave nectar)
1/2 teaspoon red wine vinegar
1 teaspoon minced garlic
1/2 teaspoon finely chopped thyme

Instructions

1. To make the dressing, mix all ingredients together until well combined. Refrigerate until ready to use.
2. Preheat oven according to pizza crust instructions. Prepare pizza crust, then top with goat cheese, grapes, chickpeas, olives and feta cheese. Sprinkle pine nuts and green onions on top.
3. Bake pizza according to package instructions. Remove pizza from oven and drizzle with honey mustard dressing. Slice and serve.
