Crab Tamales
Ingredients:
dried corn husks
1 lb. crab meat
2 Tbsp. minced onion
3 Tbsp. minced cilantro
1 Tbsp. cumin
1 Tbsp. minced garlic
1 Tbsp. chili powder
1/4 cup diced bell pepper
Masa dough*
* Masa dough can be homemade with lard and corn flour, or it can be purchased at any Mexican-food market.
Preparation:
Soak the dried corn husks in warm water for an hour. While the husks are soaking, prepare the ingredients for the tamale by placing the rest of the ingredients in a large mixing bowl.
Spread about 1/4 cup of masa dough over the soaked corn husks. Fill with the crab mixture, roll to seal in crab mixture, and tie together on either side of the corn husk. Steam for about 20 minutes.
