Jewel-bright skewers of vegetables make an ideal summer snack.
- yellow peppers
- baby corn
- cherry tomatoes
- skewers or kebab sticks
- olive oil
- pastry brush
- griddle or grill (adult supervision required)
1. Prepare vegetable skewers.
Carefully thread some slices of yellow pepper, zucchini, baby corn and some cherry tomatoes onto some skewers or kebab sticks.
2. Baste vegetables with olive oil.
Use a pastry brush and then place skewers onto a griddle or barbecue, or under the grill. Watch them and ask an adult to turn them over a few times during cooking so that the vegetables will brown all over. Serve and enjoy!
Another serving suggestion: Grate zucchini and mix the gratings with whisked up egg, onion and grated cheese. Fry the mixture in a frying pan until light brown on both sides.
