Iced Christmas Cookie Decorations
3 cups all-purpose flour
1 tsp. baking soda
2 tsp. ground ginger
2 tsp. ground cinnamon
1 stick butter, cut into pieces
¾ cup light unrefined sugar
1 egg, beaten
4 tbsp. sugar syrup
For the icing:
1 egg white, beaten with 5–7 oz confectioner’s sugar (adjust the quantity slightly, depending on the size of the egg; the icing should be smooth)
Preheat the oven to 375 degrees F.
1. Put the flour, baking soda, ginger and cinnamon in a bowl. Rub in the butter so the mix resembles breadcrumbs. Stir in the sugar.
2. Add the egg and syrup, then mix to form a dough. Turn out onto a lightly floured surface and knead to bring the dough together. Try this homemade walnut bread recipe.
3. Divide the dough into two batches. Roll each batch out with a lightly floured rolling pin to an even thickness of about 1/4 inch.
4. Cut shapes with cookie cutters; make a hole in each with a skewer, place on greased baking trays and bake for about 10 minutes. Keep an eye on the cookies while they bake, as they may burn.
