Icebox Cookie Recipe
1 cup butter
2 cups sugar
2 eggs, beaten
4-1/2 cups flour
1 tsp baking soda
pinch of salt
1 tsp vanilla
graham cracker crumbs mixed with fine sugar (optional)
1. Cream butter and sugar, add beaten eggs, then add sifted dry ingredients, then vanilla.
2. Form dough into a roll and wrap in waxed paper. Let sit in refrigerator for 24 hours then slice. Thinner slices will result in crispier cookies which are perfect for s'mores.
3. Sprinkle tops with graham cracker crumbs mixed with a bit of fine sugar to add an extra crunch.
4. Bake at 350 degrees for 8-10 minutes or until lightly brown.
