Gingerbread Snowflake Centerpiece

Whether you bake or buy your gingerbread cookies, this clever tabletop idea does double duty as dessert too.

Materials Needed:

  • gingerbread cookies, store-bought or homemade
  • royal icing, white
  • pastry bag and fine tip
  • pillar candle
  • luster dust
  • silver beads to decorate the table (optional)

Bake or Buy Gingerbread in Special Shapes

For this exact project you’ll need gingerbread in the following shapes: one large scalloped base, one small snowflake, one medium snowflake, one tree, one star with center cut out and one large snowflake with a ring around it. Again, any combination of shapes will work. Just follow the same technique to create a centerpiece out of delicious baked goods. You can use this classic gingerbread recipe or try sugar cookies.

Assemble Centerpiece

Use royal icing in a pastry bag with fine tip to create dots and lines. For the large base, first outline the whole cookie in thick royal icing, then flood it with a thinner icing.

Royal Icing:
4 cups powdered sugar
2 1/2 tablespoons meringue powder
2 tablespoons plus 1/4 tablespoon water
1 teaspoon vanilla or lemon extract

In a clean stainless steel bowl whisk together water and meringue powder, add powdered sugar and using your stand mixer (or you can use hand held mixer, too), beat until stiff and glossy peaks are formed, about 5 minutes with stand mixer and 7 minutes with hand held mixer. Add vanilla extract and beat for an additional minute. Scrape icing into an airtight bowl, cover tightly with a lid to prevent drying.

Glue the Gingerbread in Place

When constructing these centerpieces, always make sure that you leave enough time for the pieces to dry. First, when you decorate cookies and again when you glue them on to the base using royal icing. Another tip: use support to hold them upright (this project used foil). It’s best to leave them alone for several hours. Use royal icing of medium to stiff consistency to glue each piece to the base.

Write a Message

Your imagination is the limit to what you can create with gingerbread dough. You can add a message in royal icing. After the message on this project dried, it was enhanced by painting it over with luster dust. Add the candle and any other embellishments you like (silver beads, etc.) to create a centerpiece display.
