Kale Gin Smash Cocktail

Take healthy food out for a night on the town! Upgrade your usual gin cocktail with a fresh and vibrant splash of super green juice that will have you feeling like you're relaxing at the spa.

Fresh Juice Ingredients

3 leaves kale, stem removed, roughly chopped
1 cup chopped romaine lettuce
1 bunch parsley, roughly chopped
1/2 English cucumber
3 sticks celery
2 apples, halved and seeds removed
1-inch piece fresh ginger, roughly peeled
1/2 jalapeño, deseeded
juice of one lemon

Juice Instructions

You can skip this part and buy juice from the store. If you'd like to make your own juice, add all ingredients above into your home juicer in small handfuls, cleaning excess pulp as needed. Store in a sealed container in the refrigerator for up to 2 weeks.

Cocktail Ingredients

3 (1/4-inch) cucumber slices
3 ounces gin
juice of 1/2 lemon
3/4 ounce fresh pressed kale green juice (see instructions above)
2 ounces chilled tonic water

Yield: Two Cocktails

Cocktail Instructions

In a cocktail strainer, muddle cucumber and add gin and lemon juice. Shake vigorously over ice. Strain into a glass, and add a float of fresh juice and tonic water. Serve on ice with cucumber garnish.
