Big-Batch Cocktail: The Lime in the Coconut

Made from coconut vodka, coconut water, pineapple puree, fresh-squeezed lime juice and a splash of cherry-lime sparkling water, this refreshing big batch cocktail is a summery twist on the classic vodka soda.

For the most delicious results, make this big-batch cocktail the day of your party and keep chilled until ready to serve. If there's a little left over, don't throw it out! The mixture will keep for 2-3 days in the fridge. Simply stir and enjoy again.

Ingredients

Yield: About 12 cups

  • 2 cups organic coconut water
  • 5 cups chunked pineapple, fresh or canned and drained
  • 5 cups coconut vodka
  • juice of 1-1/2 limes
  • (6) 12-ounce cans cherry-lime sparkling water
  • pineapple wedges, lime wedges and California cherries, skewered for garnish

Materials

  • 12-cup pitcher or serving bowl
  • long spoon for stirring
  • ice bucket
  • blender
  • manual juicer

Blend Pineapple + Coconut Water

Add pineapple chunks and organic coconut water to blender. Blend on high until pureed smooth, about 2-3 minutes.

Juice Limes

Using a manual juicer, squeeze the juice from 1-1/2 limes.

Mix It All Together

Add lime juice, coconut vodka and pineapple puree to a 12-cup pitcher (Images 1-3). Stir to combine (Image 4).

Put Sparkling Water On Ice

Add cans of cherry-lime sparkling water to a medium bucket. Cover with ice.

Drink Em Bot' Up

When you're ready to party, add ice to a stemless wine glass. Fill glass 3/4 full with vodka mixture (Image 1) and top with sparkling water (Image 2). Stir once and garnish with a bamboo skewer of pineapple wedges, lime wedges and California cherries (Image 3). Enjoy immediately! Tip: Leave a large spoon or stirring stick in the glass pitcher, stirring occasionally or as mixture settles.
