Ingredients

1 bag (8 ounces) unsweetened, fine shred coconut
1 can (14 ounces) sweetened condensed milk
1 bag (14 ounces) sweetened coconut flakes
26-30 whole roasted salted almonds

Yield: ~30 tails

Instructions

1. In a large bowl, combine the unsweetened coconut with 3/4 can of sweetened condensed milk (Image 1). Stir until a thick candy dough forms. If the dough is too stiff to stir, add condensed milk a little at a time.

2. Place the sweetened coconut flakes in a medium bowl. Scoop out milk mixture one tablespoon at a time. Press an almond into the centers of each scoop and roll into a ball between your palms (Image 2).

3. Roll each ball in the bowl of sweetened coconut flakes (Image 3), and place on a parchment-lined baking sheet. Refrigerate until firm, about 30 minutes.

4. Package 5 pieces in a Mason jar, or place them in candy foils and package in bags or boxes.
